Sad day...

I'm extremely sad this morning because factors out of my control prevented me from eating breakfast. I'm starving and I COULD eat, but that would mean eating grains. It's tough, but I don't get lunch time until 3, so I think I'll have to. I'm extremely disappointed in myself, but this gave me an idea… work food! I'll start keeping a few emergency meals (or snacks) around in case something like this happens again. And hey, at least I'm admitting it right? I'll make sure to hit up the gym extra hard today!

Summer's coming!

I know it's almost summer when I start having meat and fruit for dinner every night! Tonight was steak and cantaloupe... my favorite of the melon family ;P I guess I better keep up this Paleo thing if I'm gonna look good in those teeny weeny itsy bitsy (you know the rest) bikinis! Wish me luck.

 I decided to put off frittata making until tomorrow, so I'll probably fry up some bacon tonight :D mmm... bacon. I DO love me some bacon. <3

Row, row, row your rower! Wait what?!

Just got back from rowing a 5k at the gym (which, I might add, I've only done twice in my life. I'm proud to say that I was 20 seconds faster this time! New time to beat: 39:39. Now to shower and relax until dinner... I think I earned it!

MMM… COOKIE!

It is now time for my after-class snack before I go to the gym in an hour or two. I know what you're thinking… how can you be eating cookies?! Trust me, I got this. These just happen to be Caveman cookies (Alpine and Tropical flavored to be exact). Of course, after years of eating super gooey, chewy, sugary cookies, these are something to get used to, but I really do like them! I'd love to try more flavors. NOM NOM NOM!


My mouth is burning!… but it feels SO right.

Lunch time! I would've taken a picture of my super-yummy, super-spicy meal, but I was blinded by hunger. And oh, it was so good. Today I had some leftover Paleo-friendly chili served over cauliflower rice. YUM!

I remember when I was skeptical of cauliflower in ANY form, but now it's almost a staple for me. It's so versatile and when you put it in a recipe, the odds are you won't even taste it. Plus, my newfound love of cauliflower (because it's only been a few weeks) has opened up a lot of possibilities. Rice is back on the menu! And trust me - if you decide to go Paleo after 16 years of your Puerto Rican mother's cooking, you're gonna miss rice… A LOT. But not anymore! And a mega bonus (aside from the health benefits) is that cauliflower rice is super easy and crazy fast to prepare! It's a win no matter HOW you look at it!

Sorry there's no picture… maybe I just didn't want to share ;) But I promise that next time I make it, I'll post pictures, and MAYBE even my recipe. Until then, it's mine, all mine *evil laugh*. Okay, I'm done.

The Hardest Part

The hardest change I'm implementing (starting today) is my increase in water drinking. I know that might seem simple, but I've never been able to get used to it! I'm going to make myself drink at least 2 bottles (64 oz) of water per day, and maybe eventually I'll want even more! But for now, all I can say is that I hope this doesn't make me have to pee too bad... that would be embarrassing. 

Breakfast Problems

So, here's the situation:

I wake up and I have x-amount of time to get ready. The problem IS that I don't always figure enough time in to cook up some breakfast… and it's not like I can just grab a bowl of cereal or something. And now I'm sitting here eating a Lärabar because it's all I could find last minute. But hey, at least it's something, right? And Key Lime Pie - one of my favorites!

Don't get me wrong, I absolutely LOVE Lärabars… I just usually eat one (or sometimes half) for a snack. I prefer nice warm breakfasts. Note to self: make a frittata tonight. Good morning everyone!
