Miss me?

I'm back! I know it's been like, a week and I'm super sorry, but I've been really busy and I guess I've just kinda forgotten to keep blogging. But fear no more!

Last night I made Paleo English Muffins thanks to Stacey beautyandthefoodie.com! They were super fast, super easy, and surprisingly yummy! You can find the recipe here: http://www.beautyandthefoodie.com/quick-paleo-english-muffins/.

ANYWAYS, I got some Organicville BBQ sauce, (which you can find here: http://organicvillefoods.com/products/bbq-sauces/original-organic-bbq-sauce/) and may I say- YUM! I wanted little muffin pizzas, but since my favorite pizza is BBQ chicken, I opted to not go for tomato sauce. Not that there's anything wrong with it.

The sauce was really great, even if it was a little sweeter than I expected. I spread it all over my pizza and added some cheese, (I know, not exactly Paleo, but old habits die hard), bacon, and chicken, and it was GREAT! I think I'm in love. The best thing is I had enough left for lunch… and probably dinner again today. Woohoo!

I'll make sure to keep y'all updated, and as a sign of good faith, I'll even tell you that I got a membership to a yoga studio. Whaaaaaaaat?! Did I mention that it's HOT yoga? I've only done it once, but I decided I want to be even MORE active and it seemed like a great opportunity. Anyways, I'll keep you posted.

Sad day...

I'm extremely sad this morning because factors out of my control prevented me from eating breakfast. I'm starving and I COULD eat, but that would mean eating grains. It's tough, but I don't get lunch time until 3, so I think I'll have to. I'm extremely disappointed in myself, but this gave me an idea… work food! I'll start keeping a few emergency meals (or snacks) around in case something like this happens again. And hey, at least I'm admitting it right? I'll make sure to hit up the gym extra hard today!

Summer's coming!

I know it's almost summer when I start having meat and fruit for dinner every night! Tonight was steak and cantaloupe... my favorite of the melon family ;P I guess I better keep up this Paleo thing if I'm gonna look good in those teeny weeny itsy bitsy (you know the rest) bikinis! Wish me luck.

 I decided to put off frittata making until tomorrow, so I'll probably fry up some bacon tonight :D mmm... bacon. I DO love me some bacon. <3

Row, row, row your rower! Wait what?!

Just got back from rowing a 5k at the gym (which, I might add, I've only done twice in my life. I'm proud to say that I was 20 seconds faster this time! New time to beat: 39:39. Now to shower and relax until dinner... I think I earned it!

MMM… COOKIE!

It is now time for my after-class snack before I go to the gym in an hour or two. I know what you're thinking… how can you be eating cookies?! Trust me, I got this. These just happen to be Caveman cookies (Alpine and Tropical flavored to be exact). Of course, after years of eating super gooey, chewy, sugary cookies, these are something to get used to, but I really do like them! I'd love to try more flavors. NOM NOM NOM!


My mouth is burning!… but it feels SO right.

Lunch time! I would've taken a picture of my super-yummy, super-spicy meal, but I was blinded by hunger. And oh, it was so good. Today I had some leftover Paleo-friendly chili served over cauliflower rice. YUM!

I remember when I was skeptical of cauliflower in ANY form, but now it's almost a staple for me. It's so versatile and when you put it in a recipe, the odds are you won't even taste it. Plus, my newfound love of cauliflower (because it's only been a few weeks) has opened up a lot of possibilities. Rice is back on the menu! And trust me - if you decide to go Paleo after 16 years of your Puerto Rican mother's cooking, you're gonna miss rice… A LOT. But not anymore! And a mega bonus (aside from the health benefits) is that cauliflower rice is super easy and crazy fast to prepare! It's a win no matter HOW you look at it!

Sorry there's no picture… maybe I just didn't want to share ;) But I promise that next time I make it, I'll post pictures, and MAYBE even my recipe. Until then, it's mine, all mine *evil laugh*. Okay, I'm done.

The Hardest Part

The hardest change I'm implementing (starting today) is my increase in water drinking. I know that might seem simple, but I've never been able to get used to it! I'm going to make myself drink at least 2 bottles (64 oz) of water per day, and maybe eventually I'll want even more! But for now, all I can say is that I hope this doesn't make me have to pee too bad... that would be embarrassing. 

Breakfast Problems

So, here's the situation:

I wake up and I have x-amount of time to get ready. The problem IS that I don't always figure enough time in to cook up some breakfast… and it's not like I can just grab a bowl of cereal or something. And now I'm sitting here eating a Lärabar because it's all I could find last minute. But hey, at least it's something, right? And Key Lime Pie - one of my favorites!

Don't get me wrong, I absolutely LOVE Lärabars… I just usually eat one (or sometimes half) for a snack. I prefer nice warm breakfasts. Note to self: make a frittata tonight. Good morning everyone!



Weigh-in: Week 1

Okay! Here goes nothing. This morning when I woke up I weighed myself. Yeah, I know, Wednesday is a weird day to have a weekly weigh-in, but I wanted to weigh-in on the FIRST day, so that I can keep better track of my progress. And the number is… 116.6 (just in case you're wondering, I'm 5'1"… and 3/4!)

I know weight isn't the best measurement of progress so I'm not gonna treat it like that. It is simply for the purpose of comparison, especially since a lot of Paleo dieters say they lost 10+ pounds within weeks.

My Inspiration

So in less than 2 hours, I begin my perfectly Paleo lifestyle, and I think this picture says a lot about why I'm doing it. I've never been the girl that can pull off crop tops and tiny shorts, but I want to... and you can bet I'm going to!

I have lots of plans to live up my last summer in Washington (which is extra exciting because I don't think I've ever made super exciting plans in my LIFE) and there is absolutely NO way I'm gonna let unwanted fat or sweet, delicious food get in the way of that. Bye bye grains (and dairy)! This girl's going Paleo.


The Struggle

This describes pretty much EVERY time I try to go über strict with my Paleo diet. I have a BIG weakness for some fettuccine alfredo. I'm super motivated though. After all, it would be really embarrassing to admit on my PALEO blog that I just shoveled down a bunch of grains. I'll be needing something to substitute so I think maybe I'll try some spaghetti squash. After all, why not? If I do, I'll make sure to post it. Until then, enjoy!


CANDY!

Easter's coming soon and I just found this super awesome link to recipes for some Paleo-Friendly candy (I'd stay away from #6 but if you want to eat peanuts good for you… they're just not exactly Paleo). For #3, I'll probably go almond butter instead of peanut butter too… and not JUST because I really hate peanut butter. I'm sure I'll be making some of these in a few days so pictures are to come!

First Posting!

I am SO excited to be starting my own blog. I love Paleo, but sometimes it gets really hard to stick to (especially when there's ice cream involved). So I'm using this to document my journey - like a food journal but cooler! Hopefully anyone seeing this will enjoy it just as much as I do :D
